Beef Heart

Beef heart is more muscle than organ, and it eats like a lean, deeply beefy steak. It's one of the easiest ways to start with organ meat, and it's rich in protein, B12, iron, and CoQ10. Ours comes whole from ranch-raised USDA Prime Angus cattle.

Trim off the outer fat and silver skin, then slice it thin and marinate for quick-seared fajitas or anticuchos, or cube it and braise it low and slow like a roast. You can also grind a little into your burger mix for extra flavor.
