Ours are cut thick from pasture-raised Berkshire pork, a heritage breed with natural marbling that keeps every bite tender and full of flavor. They come fully cooked and cured with a smoky, savory taste, so dinner is ready as soon as the steak is heated through. One steak is plenty for a big family breakfast or a weeknight dinner with leftovers. Fry it up with eggs, brush it with a honey glaze, or dice the leftovers into split pea soup. Every steak is vacuum-sealed and flash-frozen, so you can keep a few in the freezer for whenever you need them.
