Oxtail

Oxtails are one of the most flavorful cuts on the steer, and cooks around the world have built comfort food around them for generations. Ours are USDA Prime Angus, and each piece has a center bone wrapped in rich, meaty beef and plenty of collagen. Brown them, then braise them for a few hours with onions, garlic, herbs, and stock until the meat slips off the bone and the liquid turns into a glossy, rich sauce. Serve them over rice, stir them into soup, or spoon them over creamy polenta.
