Berkshire pork, raised on pasture. Berkshire is a heritage breed with more marbling than standard grocery pork, so these ribs stay juicy and pick up smoke well. Go low and slow on the smoker for tender, pull-clean ribs. Each rack is vacuum-sealed and flash-frozen to lock in freshness.
